A Delicious Healthy Breakfast Smoothie Bowl

For breakfast I usually go for a sweet, delicious home made smoothie or smoothie bowl! Hydrating, nutrient dense, energizing, easy to digest and quick to make! I always add in fruit for all of my micro and macro nutrients + some seeds for my whole plant fats and protein. This combo keeps me fired up & fueled for my busy days!
My all time favorite combination for hot summer days has always been coconut + pineapple - so of course my go-to smoothie has been a creamy, sweet Pina Colada smoothie!
What you’ll need:
- 3-4 peeled/diced/frozen solid bananas
- 1 cup diced/frozen solid pineapple
- 1-2 cups nondairy milk of choice (I usually use unsweetened almond milk) + water to desired consistency.
- 1-2 tbsp chia/flax/hemp seeds
- 1 tsp coconut extract
- 1 tsp vanilla extract
- shredded coconut (as a garnish)
In a blender (I use a VitaMix but any decent blender will do!) add all ingredients (aside from shredded coconut) and blend until smooth. Pour in a big ol’ mason jar and pop in a straw and garnish with a slice of pineapple + a sprinkle of shredded coconut!
I love to make mine into a smoothie bowl — by adding a little less liquid to the blender you can create a thicker consistency and make a creamy smoothie bowl with tons of toppings like I did!
Optional: Add any other frozen fruit to the blend and amp up the flavor - I love adding peach, mango or strawberries!
Have leftovers? Pop them in a popsicle tray and freeze for a few hours - now you’ve got some BOMB popsicles! — Popsicle trays can be found at most art supply stores or online (off amazon.com)
